Are you in a snack rut? I was, before I starting eating vegan. I?d stick with apples and peanut butter or a string cheese, rarely choosing snacks that I couldn?t grab in about a minute flat. Snacks should be easy (and healthy, too, ideally!) but that doesn?t mean you have to settle for processed food if you want a fast snack. Here are eight?vegan snack suggestions that I think omnivores will love as much as plant-eaters.
Avocado (With Anything, Basically)
Avocados get a bad rap for being high in fat, but it?s good fat, guys. And avocados are so versatile and so delicious!?Mash some and eat on toast or a charred tortilla, with a sliced tomato and a sprinkle of salt on top. Or eat the mashed avocado with chips or veggies. Stick a chunk of an avocado in a smoothie. Slice it and add it to a little salad?the possibilities are endless!
Chips And Dip
Guacamole, hummus, bean dip, edamame dip, even raw nut dip: vegan eating was made for dipping. I love Way Better Snacks chips, which are vegan, gluten-free and consist of sprouted grains, but most tortilla chips are vegan. If chips aren?t your thing, eat some dip with sliced cucumbers (I like mine sprinkled with a tiny bit of salt and chile powder), sliced bell peppers, ?or baby carrots. Roasted Veggies
I?m a huge fan of roasted chickpeas, which are a good, protein-filled option if you?re wanting something salty. Here are four different ways to make them, via Modern Parents, Messy Kids. This garlic-roasted corn recipe from Weight Watchers also looks like a delicious option.
Hemp Hearts
Elizabeth, who?s eating a vegan diet right now, says she?s a huge fan of hemp hearts. She eats them sprinkled on bread with vegan butter. They?re also tasty mixed into a trail mix.
Ants On A Log
Yup, the favorite snack from your childhood is vegan. All you need is nut butter, celery and raisins for a filling and nutritious snack (plus it still looks pretty cute!)
Chia Seed Pudding
All you need to have a delicious little fiber-filled snack is a few tablespoons of chia seeds and some non-dairy milk. I like to make mine with coconut milk and then eat the pudding with granola and honey. Choosing Raw has a great basic recipe that you can tweak to your liking.
Muffins Of Any Kind
If you set aside about half an hour to bake a batch of vegan muffins, you?ll have easy snacks (and breakfasts) for a few days. Freeze them and they?ll last even longer. Try these Carrot Spice Muffins from Oh She Glows or these Gluten-Free Vegan Applesauce Muffins from Urban Vegan.
Energy Bites
Energy bites don?t last a day in my house. I usually make them with peanut butter, oats, flaxseeds, dried fruit and other ingredients, but you can really use anything you want, as long as it?s small enough to be rolled into a ?ball. The ones pictured here,from Healthy Living Awaits, have both coffee and chia seeds for an extra energy boost.
